Kodiak Jack's French Fry Dust

Ingredients:

  • 1.5 Teaspoons of Pepper
  • 1.5 Teaspoons of Celery Salt
  • 5 Teaspoons of Salt
  • 2 Teaspoons of Garlic Powder

Steps:

  1. Mix the spices in a bowl and serve to taste on fries, chips, or any other dishes you prefer.

Kelsey's Coconut Pecan Pie

Ingredients:

  • 1 cup sugar
  • 1 cup graham cracker crumbs
  • 1/2 cup coconut
  • 1/2 cup chopped pecans
  • 4 egg whites
  • 1 teaspoon vanilla extract
  • dash of salt

Steps:

  1. Beat egg whites in a mixing bowl until stiffened peaks form.
  2. Preheat the oven at 350 degrees.
  3. Fold sugar, coconut, crumbs, and pecans gently.
  4. Mix salt and vanilla gently.
  5. Pour the mixture in to a greased pie plate (9 inch).
  6. Place the pan in the oven for 30 minutes (keeping the oven at 350 degrees).

Holiday Peanut Butter Balls

Ingredients:

  • 2 cups peanut butter
  • 2 cups powdered sugar
  • 6 cups cocoa krispies
  • 7 tablespoons unsalted butter
  • 1 teaspoons pure vanilla extract
  • 24 ounces chocolate bark coating
  • 10 ounces of marshmallows

Steps:

  1. Place parchment paper on a cookie sheet.
  2. Using a mixer at medium speed, mix 4 tablespoons of butter, 2 cups of peanut butter, and 2 cups of powdered sugar for one minute to a smooth texture.
  3. Using medium heat, melt the remaining butter in a stock pot. While stirring, add the marshmallows and vanilla.
  4. Keep stirring until the marshmallows have melted and then add the smooth peanut butter mixture.
  5. Once the mixture is smooth, add the cocoa krispies.
  6. Shape the mixture into 1.5 inch balls.
  7. Place the balls on the baking sheet with the parchment paper.
  8. Place the peanut butter balls in the refrigerator for 10 minutes.
  9. Using the directions from the chocolate bark package, melt the bark the bark to a smooth texture.
  10. Dip the peanut butter balls in to the melted chocolate bark and coat completely. Then return the peanut butter ball back to the baking sheet.
  11. Once all of the peanut butter balls have been coated, place the peanut butter balls back into the refrigerator (still on the baking sheet) to cool for 20 minutes or until a hard shell has formed.

Corn Spoon Bread

Ingredients:

  • 1 cup fine yellow cornmeal
  • 4 cups milk
  • 1 1/2 teaspoons kosher salt
  • 2 tablespoon unsalted butter
  • 2 teaspoons sugar
  • 2 eggs
  • 1 cup fresh corn kernels
  • 1/2 cup fresh scallions

Steps:

  1. In a bowl, whisk together the cornmeal, sugar, and salt with 1 cup of milk.
  2. Set the stove top to medium-high heat and place sauce pan on stove with 3 cups of milk.
  3. Continually stir the milk just before the milk starts boiling.
  4. Whisk the cornmeal, sugar salt, milk mix into the hot milk.
  5. Cook for 5 minutes whisking often.
  6. Whisk in 1 tablespoon of butter and then let cool for 30 minutes. (whisk occasionally to keep a top layer from forming on the surface).
  7. Preheat the oven to 375 degrees Fahrenheit.
  8. Use the final tablespoon of butter and butter a 1 quart baking dish.
  9. Whisk the eggs into the cornmeal mix and fold the corn and scallions.
  10. Transfer the mix into the baking dish.
  11. Bake for 1 hour or until the dish is cooked all the way through. There should be a light browning on top of the dish.
  12. Serve warm and enjoy!

Easy Chicken Casserole

Cook Time: 1 Hour 15 Minutes

Serves: 6

Ingredients:

  • 4 to 6 Skinless, Boneless Chicken Breasts
  • 1 Cup Sour Cream
  • 1 can Cream of Chicken Soup
  • 1.5 Sleeves of Ritz Crackers
  • 1 Stick of Butter or Margarine, Melted

Steps:

  1. Cook the chicken breasts in 8x11 or 9x12 dish at 350 Degrees for 20-25 minutes.
  2. Remove the chicken and check internal temperature to be done.
  3. Allow the chicken to cool and then cut chicken in to cubes and place in the bottom of the same dish.
  4. Mix sour cream, soup, salt and pepper to taste, and then spread over the cut chicken.
  5. Crumble the Ritz crackers over the top.
  6. Pour melted butter over the crackers.
  7. Bake the dish at 350 Degrees, for 35 minutes, until the dish is bubbling and the crackers are brown.
  8. Remove the dish and allow the dish to cool to liking.
